In preparation of the arrival of our second baby, I spent one full morning preparing freezer meals that would help alleviate some of the stress of bringing home baby. One of the six recipes I prepared was from the Six Sisters’ Stuff Blog – the Million Dollar Casserole. Oh boy was it a hit! I prepared the recipe mostly according to posted instructions (copied below) and divided the meal into four “take-out” sized foil trays. This evening, hubby and I tossed in one tray to taste the fruits of my labor. Delish!
Million Dollar Casserole

1 jar of Spaghetti Sauce (26 ounces)
8 oz of fat free Cream Cheese
1/4 cup of fat free Sour Cream I used about one half a tub of sour cream (4 oz or so) just to use up what I had on hand.
8 oz. low fat Cottage Cheese
1/4 cup of Butter
8 oz. of Noodles (I used penne pasta) I used close to 10 oz so that I would be able to make four meals with the dish
1 cup of Cheddar Cheese I saved putting the cheddar cheese on top until time to cook. Basically, I prepared the dish and froze, when it was time to eat I grated enough cheese to cover the top of the dish and baked in the over at 400 for approximately 35 minutes (may need to adjust cooking time based on how frozen your meal still is – mine was partially thawed)
- Boil a pot full of water. Add your noodles as directed on the package. Preheat your oven to 350 degrees. While your noodles are boiling, mix together the cream cheese, sour cream and cottage cheese. Make sure you mix it very well!
- Next place your meat in a skillet and cook until brown and cooked through. Drain it.
- Pour your spaghetti sauce over the meat and mix well.
This is where I started to deviate from their instructions. Once I cooked the pasta and the meat, I combined all the ingredients (save the cheddar cheese as mentioned above) and portioned out the results into four take out sized tin trays so that hubby and I had enough for a meal for the two of us and LO.
